FISH MONGER FRANK’S RECOMMENDATION
Atlantic salmon with herbed crumb
- 1 tablespoon oil
- 4 Atlantic salmon fillets (approx 200gm each)
- Salt & pepper to taste
- 250gm spreadable cream cheese
- 2 cloves of garlic crushed
- 2 tablespoons of finely chopped herbs (e.g. parsley, chives, dill)
- 1 tablespoon of fresh lemon juice
- Heat the oil in a non-stick frying pan. Season the salmon with salt and pepper and cook for 2 minutes each side (or until cooked to your liking)
- Combine the cream cheese with garlic, herbs and lemon juice and mix well
- Place the salmon on a serving plate and top with a dollop of your herbed cream
